Hurrah!
For the first time, I achieved one of my cooking dreams: to make Indian food that actually tastes like Indian food! That is, it tasted like you might get at a good Indian restaurant. I used this Lentil/Spinach curry recipe. I made one notable change, though: instead of oil, I used clarified butter, which I believe was important in getting the taste right. Also, using cumin seeds rather than cumin powder was probably important. And I added a clove of garlic.
My next goal is to make all sorts of Indian recipes, especially the vegetarian ones...
